Recipe Box : Game Time Guacamole and Quarterback Queso
Football fans and commercial lovers alike will need something to chew on besides their fingernails while watching Super Bowl XLVI on Sunday. Here are two easy recipes that are sure to tackle their taste buds.
Game Time Guacamole
*Makes 5 servings
Ingredients:
2 avocados
1/2 teaspoon salt
2 tablespoons limejuice
1 clove minced garlic
1 seeded Roma tomato
Directions:
In a bowl, mash the avocados with a fork. Add salt, limejuice, garlic and diced tomato. Taste test the mixture and add more lime juice if needed. Optional: Spice it up with dashes of cayenne pepper. Serve with pita chips.
Quarterback Queso
*Makes 24 servings
Ingredients:
1 pound Velveeta cheese, cubed
1 can diced tomatoes
1/4 cup diced green chili peppers
Directions:
In a slow cooker, melt cheese cubes until they’re smooth, stirring occasionally. Mix in diced tomatoes and chilies. Serve over tortilla chips.
