Juice muffins a quick, easy dorm snack
As the daily walk to class becomes marked by the sweet, woodsy scent of autumn and the kaleidoscope of undressing trees, one may also notice an increase in sniffles, sore throats, or coughs. So why not fight your odds of developing the season’s first cold by making some tasty vitamin-C packed muffins? Not only are they made with Kimmel and FoodWorks (friendly orange juice, cranberries and flour), but they take only half an hour to bake and should satisfy a sweet tooth.
So if you’re hungry for some slightly fruity muffins, feel like telling your friends that you can make some bad-ass muffins in under 30 minutes, or simply want to keep the germs at bay, track down a muffin tin and get to work.
You’ll Need:
2 cups flour (we used whole wheat)
1 cup orange juice
cup sugar
tsp cinnamon
1 cup raisins, Craisins or dried currants
To make:
1. Preheat oven to 305 degrees.
2. Grease pan with cooking spray (but you can probably get away without doing this-the OJ doesn’t stick much).
3. Mix the dry ingredients.
4. Stir in the orange juice until evenly blended.
5. Drop spoonfuls evenly into each muffin tin.
6. Bake for about 25 minutes or until a bit springy.
7. Let cool.
8. Enjoy!
